Simple, Cleansing and Tasty After a Wild Food Weekend

Well, after our fabulous out-food weekend, settling back into our food routines is comforting.  Light food seemed in order… as light as food during the winter can be.  No great big rich chocolate cakes, no dense veal cakes, and not many other cakes to be found.  Instead, Laura made us soup and salad using root vegetables and the last of our salad greens.

Beets for roasting. Chioggia Beets are the ones with pink and white stripes, the yellow ones are Golden Beets.

Sliced Rutabaga and Sweet Potatoes.

Chopped up veggies for the soup.

Roasted Beet Salad with Greens and Garlic Whipped Feta Dressing (feta, oregano, garlic, lemon juice, olive oil).

Vegetable Soup with Chicken Stock, Potato, Sweet Potato, Carrot, Onion, Rutabaga and Celeriac, spiced with sage and thyme.

Eating out is really nice sometimes.  We definitely appreciate someone else cooking for us when we do go out.  Yet, eating at home is ultimately the most appreciated, since we know who made it, with what food stuffs, and how it was made.  Seeing it all come together and sitting down to your hard work is gratifying.  Even simple meals like this one have their charms.

Dessert happened as well, of course.  Not a super sweet dessert, but a tasty one that was also prep for this morning’s breakfast.

Corn Pancakes made with freshly ground cornmeal and frozen corn and a little molasses for sweetening. Being pan cooked.

We ate these with spring honey for dessert, and they were lovely.  Very summery tasting, with the corn and light honey.  Numbly.  They were also used to make a super breakfast this morning.

Theresa's Birthday Breakfast: Leftover Corn Fritter Pancakes with Scrambled Eggs, Queso Blanco and Salsa. Allow me to admit that she made it for herself, and that I slept in :-).

On the side, for snacks, Laura made herself tasty little snack balls of oats, walnuts, cocoa and honey.  They were really tasty, very dense and welcome in the fact that they used up the last of several jars of honey that had less than an inch lingering on the bottom.  I won’t be suprised if they are mostly gone when I get home tonight.

Walnut, Cocoa Powder, Oat Flour, Honey Balls. Good for dessert or snacks.
