Food Parade of our Weekend

We had a delicious weekend, of course a decent chunk still consisting of soup, since Theresa was convalescing.

Friday Lunch: Twice baked sweet potato, since we ate most of our vegetable soup for breakfast.

Stuffed Sweet Potato with Yogurt, Cheese, Lemon Zest and Nutmeg.

Prepping for Friday's Dinner: Washing French Green Lentils from Baer's Beans.

Coming together to make a lovely lentil stew served with toast for Friday's dinner.

Friday Dessert entailed frozen plums plus lemon zest and a honey oat crumble to make a zingy plum crisp!

Along with our 'get well soon' hot totty: lemon, ginger, honey, hot water and liquor. 🙂

Saturday Lunch: Leftover Lentil Stew

Chopped pistacio's for dinner's salad. A non-local treat from my sister who lives in CA.

Saturday Dinner: Salad: Red Fire Beet and Spinach salad with chopped pistacio, raw garlic, olive oil, and smoked blue cheese dressing. Delish!

Saturday Dinner: Corn Chowder, with bacon, potatoes, and leeks.

Saturday Dessert: Frozen cherries cooked in cognac, served with toast with melted chocolate (pain au chocolat). Amazing.

Sunday Breakfast: Oatmeal with Frozen Peaches and Yogurt.

Sunday Dinner: Roasted Butternut Squash 'fries' with ginger. Excellent side.

Sunday Dinner: A most amazing Pork Shoulder Roast cooked with Cider, served with fresh spinach, dried apple, and an apple, onion gravy. Simply delicious.

That was our weekend in food.  I hope everyone had a lovely weekend too!
